Instructions
- 1
In a large bowl, whisk together the all-purpose flour, granulated sugar, and salt.
- 2
In a separate bowl, whisk the eggs, then add the water and milk, whisking until combined.
- 3
Gradually pour the wet ingredients into the dry ingredients, whisking continuously until smooth and no lumps remain.
- 4
Stir in the 2 tablespoons of melted butter.
- 5
Let the batter rest for at least 10-15 minutes (or up to an hour in the fridge).
- 6
Heat a non-stick pan (about 8-10 inches) over medium heat. Lightly brush with melted butter.
- 7
Pour about 1/4 cup of batter into the center of the pan, immediately tilting and swirling the pan to spread the batter thinly and evenly over the entire surface.
- 8
Cook for 1-2 minutes, or until the edges are lightly browned and the crepe easily lifts from the pan. Flip and cook for another 30-60 seconds on the other side.
- 9
Slide the cooked crepe onto a plate. Repeat with the remaining batter, stacking the crepes as you go. Serve warm with desired fillings.
